During hot summer months, this chilled mint pea soup is deliciously refreshing.
Ingredients
1 lb. organic, fresh or frozen peas2 ½ cups gluten-free chicken or vegetable stock1 medium size onion cut in quarters2 garlic cloves, minced1 sprig of fresh mint or 5 leaves1 GF bay leaf½ tsp. sea salt1 ½ cups buttermilkGF freshly ground black pepper to taste *As an Amazon Associate and member of other affiliate programs, I earn from qualifying purchases.

Instructions
Add peas, stock, onion, garlic, mint, bay leaf and salt into a soup pot. Bring to boil, cover and reduce heat to low. Cook for 15 minutesRemove from the heat and discard onion, mint and bay leafPuree in a food processor or blender, and then stir in buttermilk. Chill for 2 hoursTo serve, drizzle with buttermilk and fresh chopped mint leaves
