Chilled Mint Pea Soup – Gluten-Free

During hot summer months, this chilled mint pea soup is deliciously refreshing.


  • 1 lb. organic, fresh or frozen peas
  • 2 ½ cups gluten-free chicken or vegetable stock
  • 1 medium size onion cut in quarters
  • 2 garlic cloves, minced
  • 1 sprig of fresh mint or 5 leaves
  • 1 GF bay leaf
  • ½ tsp. sea salt
  • 1 ½ cups buttermilk
  • GF freshly ground black pepper to taste

  • Add peas, stock, onion, garlic, mint, bay leaf and salt into a soup pot. Bring to boil, cover and reduce heat to low. Cook for 15 minutes
  • Remove from the heat and discard onion, mint and bay leaf
  • Puree in a food processor or blender, and then stir in buttermilk. Chill for 2 hours
  • To serve, drizzle with buttermilk and fresh chopped mint leaves
