Authentic Italian Apple Cake – Easy and Gluten Free Recipe

Ingredients
3 apples, I used Granny Smith (see other options on the blog)
1 1/4 cups (185 g) gluten-free measure for measure all-purpose flour blend
1 cup (200 g) sugar, divided
3 large eggs
1/2 cup (120 ml) sour cream or full-fat Greek yogurt. Or a plant-based alternative
1/4 cup (60 ml) fresh lemon juice (about 2 lemons), divided
1 tbsp lemon zest (from about 1 large lemon)
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350 F. Grease and flour a 9-inch round cake pan, or line it with parchment paper. (Wetting the paper and squeezing the water out will make lining the pan easier)
- Prepare the apples: Peel and core the apples, then thinly slice them into wedges and place in a bowl. Coat the apples with 1 tablespoon of lemon juice and a tablespoon of sugar.Â
- Mix the Wet Ingredients: In a large bowl, whisk together the eggs and sugar until light and frothy, about 2-3 minutes. Add sour cream/yogurt, lemon juice, lemon zest and vanilla. Mix until smooth.
- Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The consistency will be a thick batter. (see picture on the blog)
- Bake the Cake: Pour the batter into the prepared pan. Arrange the apples over top pressing each slice sideways (not flat, see picture on the blog) into the batter. Bake for about 45 - 55 minutes or until the cake is golden around the edges, and tested with a toothpick.
- Cool and Serve: Let the cake cool in the pan completely. Once cool, dust the top with a generous amount of powdered sugar for a rustic Italian finish, if you wish. Enjoy cold or at room temperature.
