Gluten Free Rhubarb Strawberry Squares

2 cups sliced rhubarb (about ½-inch thick pieces)
2 cups sliced ripe strawberries
½ cup turbinado raw sugar
2 Tbsp. arrowroot or tapioca starch/flour
1 tsp. GF ground cinnamon
1 cup certified gluten free oats
1 cup almond flour
½ cup all purpose gluten free four blend
1/3 cup turbinado raw sugar
2 Tbsp. GF ground flaxseed
2 tsp. GF baking powder
¼ tsp. sea salt
½ cup melted coconut oil
½ cup dairy free milk
1 cup chopped pecans or walnuts


In a medium size bowl, mix the topping ingredients and set aside
Preheat oven to 350 F and line a 7x11-inch (8 cups) baking pan with parchment paper
In a large bowl mix oats, flour, turbinado sugar, flaxseed, baking powder and sea salt. Add coconut oil and dairy free milk and mix to combine
Press the dough into the prepared baking pan and bake for 10 minutes. Top with rhubarb mix and then chopped nuts. Bake for 40 more minutes
