Gluten Free Rhubarb Strawberry Squares

This healthy dessert recipe is the ideal showcase for rhubarb and strawberries. Did you know that rhubarb is a vegetable rather than fruit? The beauty of this recipe is that it is not complicated and the results are outstanding. In this gluten free rhubarb strawberry dessert, the base is moist and spongy. The topping is slightly tart with crunchy pecans or walnuts, making this dessert irresistible

Ingredients

  • TOPPING
  • 2 cups sliced rhubarb (about ½-inch thick pieces)
  • 2 cups sliced ripe strawberries
  • ½ cup turbinado raw sugar
  • 2 Tbsp. arrowroot or tapioca starch/flour
  • 1 tsp. GF ground cinnamon
  • BASE
  • 1 cup certified gluten free oats
  • 1 cup almond flour
  • ½ cup all purpose gluten free four blend
  • 1/3 cup turbinado raw sugar
  • 2 Tbsp. GF ground flaxseed
  • 2 tsp. GF baking powder
  • ¼ tsp. sea salt
  • ½ cup melted coconut oil
  • ½ cup dairy free milk
  • 1 cup chopped pecans or walnuts
  • Instructions

  • In a medium size bowl, mix the topping ingredients and set aside
  • BASE
  • Preheat oven to 350 F and line a 7x11-inch (8 cups) baking pan with parchment paper
  • In a large bowl mix oats, flour, turbinado sugar, flaxseed, baking powder and sea salt. Add coconut oil and dairy free milk and mix to combine
  • Press the dough into the prepared baking pan and bake for 10 minutes. Top with rhubarb mix and then chopped nuts. Bake for 40 more minutes
