Coleslaw In Light Coconut Dressing With Mint

This deliciously light and creamy coleslaw is mildly flavoured with mint. This salad can be served as a starter or as a side with lamb, pork or chicken.



  • 4 cups thinly sliced white cabbage
  • 1 small white onion, thinly sliced
  • 1 organic cucumber, thinly sliced with partial skin on
  • 1 organic carrot, shredded
  • 1 organic green apple, leave skin on and thinly sliced
  • ¼ cup organic fresh mint leaves, thinly sliced
  • Sea salt and organic GF freshly ground black pepper to taste
  • For the dressing • ¼ cup organic GF apple cider • ¼ cup coconut milk • 2 garlic cloves, minced • 2 tsp. pure maple syrup • ¼ cup extra virgin olive oil •
  • Instructions

  • Combine cabbage, onion, cucumber, carrot, apple and mint leaves in a large bowl
  • In a high speed blender add all the dressing ingredients and blend until creamy
  • Pour dressing over salad, toss and serve
