Coleslaw In Light Coconut Dressing With Mint

This deliciously light and creamy coleslaw is mildly flavoured with mint. This salad can be served as a starter or as a side with lamb, pork or chicken.

 

Ingredients

4 cups thinly sliced white cabbage
1 small white onion, thinly sliced
1 organic cucumber, thinly sliced with partial skin on
1 organic carrot, shredded
1 organic green apple, leave skin on and thinly sliced
¼ cup organic fresh mint leaves, thinly sliced
Sea salt and organic GF freshly ground black pepper to taste
For the dressing • ¼ cup organic GF apple cider • ¼ cup coconut milk • 2 garlic cloves, minced • 2 tsp. pure maple syrup • ¼ cup extra virgin olive oil •

Instructions

Combine cabbage, onion, cucumber, carrot, apple and mint leaves in a large bowl
In a high speed blender add all the dressing ingredients and blend until creamy
Pour dressing over salad, toss and serve
