Braised Kale with Cabbage and Carrots

This dish is so simple to prepare yet tastes absolutely wonderful. Kale, cabbage and carrots make tempting partners in this tasty dish. Serve over rice or as a side with a main dish. This vegan dish is packed with healthy nutrients, enjoy!

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 small yellow onion, thinly sliced
  • 1 tsp. GF caraway seeds
  • 1 bunch kale leaves, stems removed and thinly sliced
  • 3 cups sliced green cabbage (slices should be 1-inch wide)
  • 2 carrots, sliced lengthwise into thin strips or julienned
  • Sea salt and coarsely ground GF black pepper to taste
  • 1 Tbsp. apple cider vinegar
  • Instructions

  • In a large pot sauté onions in olive oil over medium-low heat until translucent. About 3 minutes
  • Stir in caraway seeds and then kale, cabbage and carrots. Season with salt and pepper and stir-fry for 2 minutes
  • Reduce heat to low and cover. Braise the vegetables for 20 minutes, stirring halfway through.
  • Remove the pot from the heat and stir in apple cider vinegar. Serve warm
