Scented Rice With Currants – Gluten Free

Adding healthy spices and sweet currants to this rice dish puts a new twist on plain rice. This flavourful rice side will compliment curry, chicken or pork dish.

Ingredients

  • 2 cups GF basmati rice
  • 1 cup GF, sulfite-free, oil-free dried currants
  • 1 Tbsp. minced ginger
  • 1 Tbsp. pure coconut oil
  • 1 tsp. GF ground turmeric
  • GF ground coriander
  • ½ tsp. sea salt or to taste
  • ¼ tsp. GF ground cinnamon
  • 3 cups vegetable stock
  • Instructions

  • Add all ingredients into a large saucepan and stir
  • Bring to boil, cover and reduce heat to low
  • Cook for 8 minutes and then remove from the heat, leaving it covered for 15 minutes
  • Fluff with a fork and serve
