Homemade Coconut Cashew Vanilla Yogurt (Vegan, Gluten-Free, Soy-Free)

As we approach the warm weather, there is nothing more refreshing than yogurt with fresh fruit. I tried many brands of vegan gluten-free yogurt, but honestly, I didn’t find one that I liked, and they are costly.  So, I decided to invest in a yogurt maker. I have been working on various yogurt recipes, but this coconut cashew vanilla yogurt is my favourite. This homemade yogurt is nutritious and luscious without unwanted additives, artificial flavours and preservatives. For flavour, I added coconut meat and a hint of vanilla. Honestly, this yogurt is so good! I love the yogurt as is, but if you are looking for variations add fresh seasonal fruit, seeds or nuts you will love it! The best part is, this yogurt is satisfying because cashews are packed with protein, and for added health benefits, cashews are high in magnesium. What I love about this healthy and refreshing yogurt is, you can enjoy it any time of the day 


  • 1 cup raw unsalted cashews, soaked overnight and drained
  • 1 cup pure coconut meat, fresh or frozen
  • 1 Tbsp pure maple syrup (no substitutions)
  • 1 tsp. Pure vanilla extract
  • 2 GF vegan probiotic capsules (I used lactobacillus)

  • Before you start, make sure all your utensils are super clean and do not use a metal bowl or metal spoons because it will react with the probiotics
  • Remove the probiotics from the capsules
  • In a blender, combine all ingredients until very smooth.
  • Pour the mixture into yogurt maker. Ferment for 8-12 hours.
  • Chill in refrigerator
