Gluten Free No Bake Chocolate Coconut Cake

Sinfully delicious, this triple layer chocolate coconut cake is grain free, paleo and you don’t have to bake it. Just imagine brownies with coconut topped with chocolate fudge. It doesn’t get any better than this. This fabulous dessert is in our healthy dessert category.

Ingredients

  • 1 cup coconut flour
  • 1//2 cup almond flour
  • 1/3 cup pure cocoa powder
  • 1 cup any nut or seed butter (I used cashew butter)
  • 1 cup + 2 Tbsp. pure maple syrup, divided
  • 1 cup cooked mashed butternut squash
  • 2 tsp. pure vanilla extract
  • 1 ½ cups GF unsweetened shredded coconut
  • 1 ¼ cup coconut cream, (not coconut milk), divided
  • 1 cup GF chocolate chips
  • Instructions

  • Line a 4 x 10-inch loaf pan with parchment paper
  • In a large bowl combine coconut flour, almond flour and cocoa powder
  • In a small saucepan over medium-low heat melt nut butter with maple syrup. Add mashed butternut squash and vanilla and mix to combine. Pour into dry ingredients and mix well
  • Transfer batter into prepared loaf pan and press firmly into the pan. Set aside
  • Add shredded coconut, ½ cup coconut cream, coconut milk and 2 tablespoons of maple syrup in a food processor. Pulse until it forms a thick and sticky paste, but still has some texture, scraping the edges of the bowl with a spatula if needed. Spread over chocolate batter
  • Using a small saucepan over medium-low heat while stirring, melt chocolate chips with ¾ cups of coconut cream. Pour over coconut layer and refrigerate the cake overnight. Keep refrigerated until ready to serve
  • Note: if you like you can decorate the cake with roasted almonds or walnuts
