Gluten-Free French Toast Apple Casserole

This gluten-free French toast casserole is made with buttermilk, apples and cinnamon. But it is the crispy pecan topping that makes this French toast casserole extra special. Enjoy this delicious casserole for breakfast or as a sweet snack

 

Ingredients

  • 12 pieces of light gluten-free bread (rice or quinoa is a good choice)
  • 4 large eggs
  • 1 1/3 cups buttermilk
  • ¼ cup pure maple syrup + 1 tbsp. for topping
  • 1 tsp. GF ground cinnamon
  • 2 large apples, peel and thinly slice (I recommend Gala apples)
  • 1/4 cup unsalted butter
  • 1 cup raw chopped pecans
  • Instructions

  • Line a 5 x 10-inch oven proof casserole dish with parchment paper and grease the bottom with a little butter
  • In a medium size bowl whisk together eggs, milk, maple syrup and cinnamon
  • For the bread, remove crust and place 6 slices on the bottom of the casserole dish. Ladle on 1/3 of the egg mixture, half the apple slices, another layer of bread, remaining egg mixture and the apples
  • Melt the remaining butter and add maple syrup
  • Scatter pecans over the top and drizzle with butter maple mixture. Cover and refrigerate overnight
  • When ready, preheat oven to 350 F and bake for 45 minutes
  • Serve warm or at room temperature with pure maple syrup
