Preparing the Gluten-Free Dutch Baby Pancake Batter
To make the famous pancake, you prepare a Dutch Baby pancake batter. A thin pancake batter that’s baked in the oven in a hot skillet until puffy and golden brown. An important TIP, the batter should rest for about 20 minutes at room temperature before cooking, to get that light and puffy pancake texture.
Caramelizing the Bananas
While the Dutch Baby is baking, you caramelize bananas in a butter and sugar mixture flavored with vanilla and chocolate chips.
Finishing Touches
Once the Dutch Baby is cooked, pour the warm chocolate banana topping over the pancake and serve immediately.
Indulgent Breakfast or Brunch Option
It’s a wholesome and delicious breakfast or brunch option that combines the rich flavors of caramelized bananas, and chocolate with the fluffy texture of a Dutch Baby pancake.

Place pancake ingredients using only 2 tablespoons of the oil in a blender, and blend until smooth. You can also use an electric mixer or hand-held whisk. Whisk the batter until smooth. It will be thin, don't worry this is what keeps the Dutch baby fluffy and puffed. Rest the batter for 20 minutes at room temperature.
2.
While the batter is resting, preheat the oven to 425 F. While the oven is heating place a 9-inch cast iron skillet in the oven. About 10 minutes, the skillet should be very hot
3.
Carefully remove the hot skillet from the oven and drizzle with the remaining 2 tablespoons of oil. Immediately add the batter to the pan and bake for 20 - 22 minutes. The pancake edges should be golden to dark brown in color

I love the idea of bananas and chocolate! I thought I give it a go, and even though it says it is for 4 people I ate the entire pancake. (for dinner) OMG it is amazing, I highly recommend you trying this easy recipe. And, I had everything in my pantry, including very ripe bananas. Thank you K.
