Easy Paleo Chocolate Pecan Pie Recipe

Ingredients

  • PALEO PIE CRUST
  • 2 cups blanched almond flour
  • ¼ tsp. fine sea salt
  • 2 Tbsp. coconut oil
  • 1 large egg, at room temperature
  • CHOCOLATE PECAN FILLING
  • 4 large eggs, at room temperature
  • 3/4 cup coconut sugar
  • 2 Tbsp. coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1 cup gluten free dark chocolate chips (70 % cocoa)
  • 2 ½ cups pecans halves
  • Instructions

  • PALEO PIE CRUST
  • Place flour and salt into a food processor and pulse briefly
  • Add coconut oil and egg and pulse until a ball forms
  • Press dough into a 9-inch pie dish
  • CHOCOLATE PECAN FILLING
  • Add eggs, coconut sugar, coconut oil and vanilla into a food processor and blend until creamy
  • Sprinkle pecans and chocolate chips on the unbaked crust and then pour in the egg mixture
  • Bake at 350 F for 40 minutes, or until set. Cool, then refrigerate for 2 hours. Enjoy!
