Crispy Cauliflower Bites and Dip Appetizer

This is a simple gluten free appetizer made with cauliflower. The cauliflower is roasted and has a crispy coating made of parmesan cheese and herbs. The dip is simple, making this an easy gluten free appetizer. Thinking of a healthy snack? Try the cauliflower bites, but make sure you make plenty, they are addictive! Serve with or without dip

 

 

Ingredients

  • 6 cups of cauliflower florets
  • 2 Tbsp. extra virgin olive oil
  • ¼ cup gluten-free breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp. GF freshly ground black pepper
  • ½ tsp. GF ground mustard seed
  • ½ tsp. GF dried basil leaves
  • For the dip ~ Mix ½ cup sour cream or full fat plain yogurt with 2 tbsp. GF mustard and 2 minced garlic cloves
  • Instructions

  • Preheat oven to 425 F
  • In a large bowl toss cauliflower with olive oil
  • In a separate bowl combine breadcrumbs, Parmesan cheese, black pepper, mustard seed and basil. Add cauliflower and toss until well coated. I recommend that you do this in small batches
  • Arrange cauliflower on a baking sheet lined with parchment paper, making sure they are not touching.
  • Bake for 10 minutes, turn over and bake 5 - 8 more minutes or until golden. Serve warm with or without dip.
