Baked Bacon and Cheese Croquettes

What to do with leftover mashed potatoes? For me, croquettes come to mind. In this recipe, the crispy coated croquettes are packed with bacon and cheese making them a tasty snack or a breakfast side with your favourite eggs. Enjoy!

Ingredients

  • 2 cups chilled mashed potatoes (leftovers are great for this)
  • 4 bacon strips, cooked and chopped
  • 1 cup shredded cheddar cheese
  • Pinch of sea salt and GF black pepper
  • 1 cup gluten-free breadcrumbs
  • 1/2 tsp. GF Dried oregano
  • 1/2 tsp. GF garlic powder
  • 1 Tbsp. Extra virgin olive oil
  • 2 eggs, whisked
  • 1/3 cup gluten-free all-purpose flour or rice flour
  • Instructions

  • Preheat oven to 400 F and line a baking tray with parchment paper
  • Mix mashed potatoes, bacon, cheddar cheese, salt and pepper together. Set aside
  • Mix the bread crumbs, oregano, garlic powder and olive oil together
  • Take a heaped tablespoon of potato mixture and shape into a small round croquette or cylinder. Dip the croquette into flour, then egg and roll in the breadcrumb mixture. Place on a baking tray 1-inch apart and repeat with remaining mixture
  • Bake for 15 minutes until the croquettes are golden
