Avocado Chocolate Chip Ice Cream Squares (vegan, gluten-free)

Here is an easy way to add healthy fruit like avocado to your diet and also satisfy your sweet tooth. Just imagine a delicious chocolate chip ice cream bar that is nutrient rich with healthy monounsaturated fats, potassium and fiber. These ice cream squares get the thumbs up every time!

Ingredients

  • 2 ripe avocados, peel and destone
  • 1/4 cup Fresh lime juice
  • 1 Tbsp. chopped fresh mint leaves (optional)
  • 1/3 cup virgin coconut oil, melted
  • 1 tsp. Pure vanilla extract
  • 1/4 tsp. Pure sea salt
  • 1 cup GF vegan chocolate chips plus some for topping
  • Instructions

  • Place avocados, lime juice and mint into a food processor and process until smooth
  • Add milk, coconut oil, vanilla and salt and blend until smooth
  • Fold in 1 cup of chocolate chips and pour into an 8x8-inch baking pan lined with cling wrap. Sprinkle with chocolate chips and place in the freezer for 4 hours until firm or overnight
  • Cut into 12 squares and serve frozen
  • To store, cut into squares and place between sheets of parchment paper in an airtight container in the freezer
