Not all blends are created equal. I wanted to keep the recipe simple, so I chose a blend, thus using only one flour. However, after trying various blends, I found that a rice-based blend worked the best in this ginger cookie recipe.

Traditionally, ginger cookies include molasses. I wanted to skip this ingredient and still create the same delicious flavor we know and love. To do this, I used dark brown sugar; here is how dark brown sugar gave the ginger cookies the same flavor without using molasses. 

Brown sugar

  • Brown sugar is similar to white granulated sugar but contains molasses, which gives it a brown color and a different flavor. Brown sugar is made by adding molasses back to refined white sugar after the refining process.
  • Two main types of brown sugar are light brown sugar and dark brown sugar. The only difference between the two is the amount of molasses they contain. Dark brown sugar has a higher molasses content, giving it a more complex taste and darker color than light brown sugar.

In addition, it adds moisture and a rich, caramel-like flavor to ginger cookies.

HOW TO MAKE GLUTEN FREE GOURMET COOKIES?

To create the best gluten-free gourmet ginger cookies, start with a good quality rice-based gluten free flour blend for a good texture. Enhance the flavor with a mix of ground ginger, cinnamon, cloves, and vanilla. And incorporate dark brown sugar for depth and sweetness. 

The steps

  1. Cream together butter and sugar until fluffy, then add eggs and vanilla. Slowly fold in the dry ingredients, creating a soft, pliable dough. 
  2. Chill the dough to intensify flavors, then roll into balls and coat in sugar for a delightful crunch.

Cat, the recipe is made with eggs. You can try flax eggs, but I don’t know how they will turn out since I have not used them in this recipes.
