Perfectly Spiced Rice With Raisins

This rice is delicately spiced with added sweetness from the raisins. When you are serving chicken, pork or beef, adding this flavourful rice will add a bit of ethnicity to your gluten-free meal.


1 ¾ cup gluten-free basmati rice
3 cups water
1 organic gluten-free bay leaf
½ tsp. sea salt
1 tbsp. + 1 tsp. coconut or extra virgin olive oil
1 organic sweet onion, finely chopped
2 garlic cloves, minced
1 tbsp. freshly grated ginger
½ tsp. organic gluten-free cinnamon
½ tsp. organic gluten-free turmeric
½ tsp. organic gluten-free curry powder
1 cup organic gluten-free, sulfite-free raisins
1 tbsp. pure maple syrup


In a medium size pot add rice, water, bay leaf, sea salt and 1 tsp. coconut oil, bring to low simmer, cover and cook for 15 minutes. Turn off the heat, remove bay leaf, fluff up the rice with a fork and cover for another 10 minutes.
In a non-stick frying pan or wok add 1 tbsp. coconut oil and onion, sauté onion until soft. Then stir in garlic, ginger, cinnamon, turmeric and curry powder and cook until fragrant about a minute.
Stir in raisins and maple syrup, and then add rice in batches while stirring. Once all the rice is well-combined turn off the heat and enjoy.
