Skinny Crema Catalana – Gluten free

If you like crème brule but don’t want the extra fat and sugar, you will love this delightfully light dairy-free dessert. I have added fresh berries and coconut cream as a topping, but you can add your favourite liqueur instead for a striking finish

Ingredients

  • 2 cups gluten-free vanilla coconut milk
  • ½ tsp. GF ground cinnamon
  • Grated zest of 1 lemon
  • 4 large egg yolks
  • 1/3 cup agave nectar
  • 2 Tbsp. gluten-free tapioca starch
  • Instructions

  • Whisk all the ingredients together
  • Pour mix into a heavy bottom saucepan and while stirring, slowly heat the mixture until sightly thickened. Do not boil or it may curdle (taste to make sure the starch is fully cooked)
  • Cool and pour mixture into serving bowls
  • Refrigerate overnight for it to set
  • Serve with fresh berries and coconut cream
  • TIP: if you don’t have vanilla coconut milk, use plain coconut milk and add 1 tablespoon of agave nectar and 1 tsp. pure vanilla extract
