Simply Roasted Butternut Squash

Butternut squash has a delicious nutty flavour, add herbs and spices and simple butternut squash turns into a scrumptious side dish. This delicious vegetable adds warmth to green salads or makes a healthy side to your main

 

 

 

 

Ingredients

  • 1 medium organic butternut squash, peel, remove seeds and cut to aproximately 1 1/2-inch squares
  • 1 tsp. GF dried rosemary
  • Pinch of sea salt
  • 1 tsp. GF freshly ground black pepper
  • 1 garlic clove, minced
  • 2 Tbsp. extra virgin olive oil
  • Instructions

  • Preheat oven to 400 F
  • Toss all the ingredients in a large bowl
  • Place on a baking sheet lined with parchment paper and bake for 30 minutes or until squash is just tender
  • If you are making this for young children substitute cinnamon for the spices
