Roasted Butternut Squash Recipe

This is a simply roasted butternut squash with herbs and spices and a splash or olive oil. This delicious vegetable adds warmth to green salads or makes a healthy side to your main. Roasted butternut squash is a little sweet with a slight nutty flavour and is rich in vitamin C, vitamin A and plenty of fiber. Although butternut squash is a fruit it is more often used as a vegetable. Here are instructions on how to easily peel a butternut squash

Ingredients

  • 1 medium organic butternut squash, peel, remove seeds and cut to aproximately 1 1/2-inch squares
  • 1 tsp. GF freshly ground black pepper
  • 1 garlic clove, minced
  • 2 Tbsp. extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tsp. GF dried rosemary
  • 1 tsp. GF ground black pepper
  • 1/2 tsp. Himalayan salt
  • Instructions

  • Preheat oven to 400 F
  • Using a large bowl, toss all the ingredients together
  • Place on a baking sheet lined with parchment paper and bake for 30 minutes or until squash is just tender
  • If you are making this for young children substitute cinnamon for the spices
