Roasted Spiced Squash With Carrots

This roasted spiced squash with carrots recipe makes a wonderful side to any main. The roasted veggies also make a wonderful addition to soups or warm winter salads

Ingredients

  • 4 cups peeled, cubed butternut squash
  • 4 medium size carrots, cut to bite size pieces
  • 1 Tbsp. fresh minced ginger
  • 1 tsp. GF ground turmeric
  • 1 tsp. GF chili powder
  • ½ tsp. GF ground black pepper
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp. sea salt
  • Instructions

  • Preheat oven to 400 F
  • In a large bowl toss everything together until well coated
  • Scatter squash and carrots on a baking sheet lined with parchment paper
  • Bake for 20 minutes or until carrots and squash are tender
