Light Kale Salad with Parmesan Cheese

This simple kale salad is seasoned with light garlic vinaigrette and finished with fresh Parmesan cheese. Sometimes the simplest things in life are the best things for us such as this kale salad. Serve as a starter, side or the main attraction

 

 

 

 

Ingredients

  • 16 oz. pre-washed organic baby kale, remove stems and thinly slice
  • 1 cup cherry tomatoes, halved
  • 2 spring onions, thinly sliced
  • 1 cucumber, thinly sliced
  • Pinch of fresh herbs like dill, basil or cilantro. Add as much or as little as you like.
  • 1/2 cup sweet peas and
  • 1 large carrot, grated
  • 1/2 cup extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/4 cup apple cider vinegar
  • Sea salt and freshly ground GF black pepper to taste
  • ½ cup freshly grated Parmesan cheese plus some for topping
  • Instructions

  • Place all the vegetables in a large salad bowl
  • Mix olive oil, garlic, and apple cider vinegar. Pour over salad and toss. Season with salt and pepper
  • Add Parmesan cheese and toss again. Sprinkle some more Parmesan cheese over the salad
