Instant Pot Steamed Artichoke With Peri Peri Dip

This Instant Pot Artichoke With Peri Peri Dip is ready in 15 minutes from start to finish. How wonderful is that? Ordinarily, when you steam an artichoke it may take up to 40 minutes or more to steam, so using an instant pot is the way to go for a perfectly cooked artichoke every time. To complete this delicious instant pot artichoke recipe I added most delicious peri peri dip which is, garlicky, lemony, spicy and creamy, so delicious! 

The two make a perfect combo. This healthy and most delicious steamed artichoke is a healthy keto snack for any time of the day.  I often serve it as an appetizer or starter, everyone loves it, especially if you are following a low carb diet.  The best part about an artichoke is the heart…honestly it is soo good. You can serve the artichoke hot or cold, but during the hot summer months, I prefer mine cold. If you don’t have an Instant Pot already, I highly recommend you get one. It will save you so much time, and you can walk away, no need to watch it while it cooks. I especially love it for stews, soups, maccaroni & cheese, and my most popular instant pot scalloped potatoes. Enjoy!

Ingredients

  • 4 artichokes, medium size
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. fresh lemon juice
  • 1 minced garlic clove
  • 1/4 tsp. Himalayan salt
  • 1 bay leaf
  • PERI PERI DIP
  • 1/2 cup sour cream
  • 2 Tbsp. grated parmesan cheese
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. fresh lemon juice
  • 1 garlic clove, minced
  • Himalayan salt to taste
  • Instructions

  • Prepare the artichokes by cutting off tops, so they are flat and cut off the stems, so they sit flat
  • Mix olive oil, lemon juice, garlic and salt
  • Slightly pull away the leaves from the center of the artichoke and drizzle with the garlic oil
  • Pour 1 1/2 cups of water in the instant pot and add the bay leaf
  • Place steamer in the instant pot. Add artichokes top facing up. Close the lid and cook on high pressure for 12 minutes, make sure the valve is set to seal
  • For the dip; while the artichokes are steaming mix the dip ingredients
  • After 12 minutes of cooking, release pressure using the quick-release method. Once the artichokes are cool enough to handle, serve with the dip. Or serve cold
