What is Aquafaba?

In this recipe, the key ingredient is aquafaba. It’s what gives the breading its extra crispiness and light texture, all while keeping the fried food low in oil and egg-free.

Aquafaba is the liquid leftover from cooking legumes, most commonly chickpeas (garbanzo beans), though it can also come from beans like white beans or lentils. The name comes from the Latin words “aqua” (water) and “faba” (bean), meaning “bean water.”

This liquid is a fantastic egg substitute in vegan cooking, especially for people allergic to eggs. Aquafaba contains proteins and starches and mimics egg whites in texture, helping breading stick while creating a light, crispy crust.

Here’s why it’s perfect for breading

  • Binding: Just like egg whites, aquafaba has a sticky texture that helps your coating adhere.
  • Neutral Flavor: Aquafaba has a neutral taste, it won’t overpower the flavor of your food.

Ingredients for Gluten-Free and Egg-Free Crispy Breading

  1. Rice Flour: (Adds a fine texture and provides a light, crispy base.)
  2. Tapioca Starch: (Creates a chewy, crispy exterior when fried, complementing the rice flour)
  3. Gluten-Free & Egg-Free Bread Crumbs: You can buy gluten-free and egg-free breadcrumbs or, (make your own gluten-free bread crumbs)
  4. Aquafaba (Chickpea Brine): (This magical liquid from canned chickpeas or homemade chickpeas is an excellent egg replacer that helps the breading stick and gives you a light, crispy crust.)
  5. Seasoning: (optional) Customize the breading with your favorite seasonings. A mix of garlic powder, onion powder, paprika, dried herbs, salt, and pepper is a great place to start. Make sure your spices are gluten-free! You can add some heat with cayenne or chili powder, or go herby with thyme and oregano.
  6. Oil for frying: (avocado, olive or vegetable oil)

Step-by-Step Guide to Making Gluten-Free & Egg-Free Crispy Breading for Fried Food

(Details in recipe card)

1. Prepare the Coating Mix

Mix the rice flour with tapioca starch in a shallow bowl. This combo creates a light, crispy texture as it absorbs moisture from the food you’re frying.

Next, season your gluten-free bread crumbs (or leave them plain if you prefer). You can customize the flavor with garlic, onion powder, dried herbs, or any spices you like. Just make sure your seasonings are gluten-free. If you’re unsure, check the label, as some spices may contain hidden gluten.

2. Prepare the Aquafaba Liquid

Pour the aquafaba (chickpea brine) into a separate shallow bowl. Whisk it lightly with a fork or a whisk. You can use it straight from the can or cook your chickpeas and reserve the cooking liquid.

3. Bread the Food

Time to bread your fish, chicken, pork, or veggies! Follow these simple steps:

Dip your food into the rice flour and tapioca starch mixture, coating it evenly.

Fry to Perfection

Heat oil in a skillet or deep fryer over medium-high heat. You want the oil hot enough to sizzle when the food is dropped in the oil, but not so hot that the coating burns before the food cooks through. Good frying oils include vegetable, avocado, or olive oil. (I used olive oil)

Fry the food for about 3-5 minutes per side or until golden and crispy. Cooking time may vary depending on the size of the pieces, so keep an eye on them. When they’re golden and crispy, remove from the oil and drain on a paper towel-lined plate.

Ideal Oil Temperature for Frying

For the best results, aim for an oil temperature between 350 F (175 C). Or, 375 F (190 C), this temperature ensures a crispy, golden crust without overcooking the inside. If the temperature fluctuates too much, it can result in soggy breading or burnt crusts, so use a cooking oil thermometer to maintain the right temperature. If you don’t have one, test the oil by dropping in a small piece of breading—if it sizzles right away, the oil is ready.

Bake Instead of Fry

For a lighter, lower-fat version, try baking your breaded food instead. Preheat the oven to 400 F (200 C) and bake for 20-25 minutes or until golden and crispy. To get that extra crisp, spray the food with cooking oil (I use olive oil) before baking. The breading will be almost as crisp as when fried.

Serving Ideas

This crispy, gluten-free, and egg-free breading works wonderfully with various foods:

  • Fish: Serve with tartar sauce or a fresh lemon wedge.
  • Chicken: Pair with your favorite dipping sauce, like honey mustard or barbecue sauce.
  • Pork: Try it with apple sauce or a spicy mustard dipping sauce.
  • Veggies: Perfect for fried zucchini, mushrooms, cauliflower, or broccoli—serve with ranch or a tangy vinaigrette.
