Grain-Free Tropical Chocolate Rum Balls

If you are looking for a little sweetness after dinner, these grain-free tropical chocolate rum balls are just what you need to satisfy the craving. The rum balls are made with cocoa, nuts, pineapple and rum. The sweetness comes from dates, so no need to add a sweetener. This recipe is acceptable on a gluten-free, paleo and raw diet.

Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup cashews
  • 3/4 cup almond flour
  • 1 cup roughly chopped dried pineapple
  • 1/2 cup pure cocoa powder plus some for dusting
  • 1/4 cup rum
  • Zest of 1 lemon

    Instructions

  • Place dates in hot water for 5 minutes, then drain
  • Add dates to a food processor and process until a thick paste forms
  • Add balance of ingredients and pulse until the mixture is fairly smooth
  • Shape mixture into walnut size balls and dust with cocoa powder
  • Store in an airtight container for a minimum of 24 hours before serving
