  • 1 cup cashews
  • 3/4 cup almond flour
  • 1 cup roughly chopped dried pineapple
  • 1/2 cup pure cocoa powder plus some for dusting
  • 1/4 cup rum

  • Place dates in hot water for 5 minutes, then drain
  • Add dates to a food processor and process until a thick paste forms
  • Add balance of ingredients and pulse until the mixture is fairly smooth
  • Shape mixture into walnut size balls and dust with cocoa powder
  • Store in an airtight container for a minimum of 24 hours before serving
