Glute-Free Vegan Cauliflower Alfredo Sauce

Ingredients

  • 2 Tbsp. Coconut oil
  • 1 large onion, sliced
  • 3 Garlic cloves, chopped
  • 1 medium cauliflower, broken into small florets
  • 1 cup dairy-free milk (coconut, almond, rice)
  • 3/4 - 1 cup GF mushroom or vegetable broth
  • 2 Tbsp. Nutritional yeast
  • Salt and pepper to taste

    Instructions

  • In a medium-size saucepan, heat coconut oil over medium heat. Add onions and garlic and stir. Cover and reduce heat to medium-low. Cook for 10 - 15 minutes or until the onions are golden colour, stirring frequently
  • While the onions are cooking steam cauliflower until tender
  • Add everything into a high-speed blender, starting with only 3/4 cup of stock and blend until smooth. See how thick the sauce is, if needed add little more stock. Enjoy!
