Gluten-Free Teff Energy Cookies

Teff is a small gluten-free ancient grain with a mild nutty flavour. This tiny grain (seed) has more calcium than any other grain, is a complete protein and is the only grain that contains vitamin C. In this cookie recipe I combined teff flour with oats, nut butter, pumpkin seeds and dates, making this a healthy gluten-free cookie that will provide you with lasting energy, fiber and eight essential amino acids. Enjoy this tasty cookie for breakfast or as anytime energy snack. This healthy gluten-free cookie recipe is a keeper!

Ingredients

  • 1 ripe banana (about ¾ cup mashed)
  • 1 egg (for vegan option use flax egg or egg substitute)
  • ½ cup unsweetened nut butter (almond, cashew, walnut)
  • 3 Tbsp. melted coconut oil
  • 3 Tbsp. pure maple syrup
  • 1/2 cup teff flour
  • 1/2 cup certified gluten-free rolled oats
  • 1/4 tsp. GF ground cinnamon
  • ¼ tsp. baking soda
  • ¼ tsp. pure salt
  • 1/3 cup pumpkin seeds
  • 1/3 cup chopped dates
  • Instructions

  • Preheat oven to 350 and line a baking sheet with parchment paper
  • Add banana to a mixing bowl and mash with a fork
  • Add egg, nut butter, coconut oil and maple syrup. Using an electric mixer mix to combine
  • In a separate bowl, mix teff flour, rolled oats, cinnamon, baking soda and salt. Add to wet mixture and stir to combine
  • Add pumpkin seeds and dates and stir until evenly distributed. Place in the freezer for 15 minutes
  • Using an ice cream scoop or a tablespoon drop batter on prepared cookie sheet and bake for 13 - 15 minutes until the bottom sides start to golden
