Gluten-Free Italian Mozzarella Cheese Sticks

Ingredients
12 Mozzarella string cheese sticks or mozzarella cheese cut into 3/4-inch x 3/4-inch sticks
1 cup grated parmesan cheese
2 Tbsp. Coconut flour
1 Tbsp. GF cornmeal
1 tsp. GF baking powder (preferably aluminum free)
1 tsp. GF dried basil
1 tsp. GF dried oregano
1/4 tsp. GF garlic powder
2 eggs, whisked
Oil for frying
Instructions
- In a medium bowl, combine Parmesan cheese, coconut flour, cornmeal, baking powder, basil, oregano and garlic
- Dip each piece of cheese in the eggs, then roll in Parmesan mixture to coat. Dip in the egg and cheese mixture again. Place on a tray and freeze, about an hour in the freezer
- Heat about 1/2-inch of oil in a frying pan over medium-high heat. Flash-fry each cheese stick for about a minute per side until golden and before cheese starts to leak. Drain on a paper towel and enjoy!
