Gluten-Free Cheese Burger Mac & Cheese

This is a lazy night gluten-free dinner that everyone will enjoy! In this dish, the creamy pasta is baked with a tasty burger like beef combined with plenty of cheese. Nothing about this recipe I complicated. This pasta dish is hearty and comforting and an easy back to school recipe. Serve as is, but if you have the energy add a light salad or steamed veggies, such as peas, carrots or corn. 

Ingredients

  • 8 oz. gluten-free small pasta (elbow macaroni, bow ties, farfalle, rigatoni)
  • 1 lb. lean ground beef
  • 1 small onion, finely chopped
  • 1/3 cup GF ketchup
  • 1 cup half and half cream or milk
  • 1/4 tsp. GF ground nutmeg
  • 1 1/2 cups grated cheddar cheese, divided
  • Pure sea salt and GF ground black pepper to taste
  • Instructions

  • Bring a pot of salted water to boil add the pasta and cook as per package instructions, keeping it al dente. Drain the pasta reserving about 2 cups of the water. Set aside
  • While the pasta is cooking, brown the beef with onion, ketchup and worchestire sauce. Add some of the reserved water from the pasta (about 1 cup) to make it a sauce
  • In a medium sauce pan, whisk together cream, tapioca starch and nutmeg. Simmer until the sauce starts to thicken, stirring frequently. Stir in 1 cup of cheese and then pasta and just enough reserved water (about 1 cup) to make a thick sauce. Season with salt and pepper
  • Transfer half the pasta into a cast iron pan or buttered baking dish. Layer with beef mixture and top with remaining pasta. Sprinkle with remaining cheddar cheese
  • Bake at 400 F for 15 - 20 minutes until the top is golden
