Gluten-Free Baked Zucchini Fries

These baked zucchini fries are lightly spiced with a crunchy Parmesan coating. Most zucchini fries are high in fat because they are deep-fried. In this recipe, they are baked making them lower in fat and calories. Serve as a healthy snack or an appetizer. Careful, these fries are very addictive so make extra!

 

Ingredients

  • 4 medium zucchini
  • Sea salt for sprinkling
  • 2 Tbsp. extra virgin olive oil
  • ½ tsp. GF garlic powder
  • ½ tsp. GF smoked paprika or chili powder
  • ¼ tsp. GF freshly cracked black pepper
  • ½ cup grated Parmesan cheese
  • Fresh chopped parsley for garnish (optional)
  • Instructions

  • Preheat oven to 425 F and line a baking sheet with parchment paper
  • Cut zucchini into fries. Place on a paper towel and sprinkle with salt, rest for 30 minutes. The zucchini will release moisture, pat dry with the paper towel. (Salting the zucchini in advance, helps release some of the moisture, making them nice and crispy)
  • In a bowl combine olive oil, garlic powder, paprika and black pepper
  • Add zucchini and gently toss until well coated, then roll in Parmesan cheese.
  • Place zucchini on the prepared baking sheet. They should be close to each other but not touching. Sprinkle remaining cheese over the top and bake for 10 minutes or until golden
  • Serve immediately
