Cauliflower Mash with Chives Recipe

This creamy cauliflower mash recipe is so simple to make, not to mention super healthy! There are many versions of cauliflower mash, but this recipe has a little more flavour than most. Next time you are thinking of making mashed potatoes, try this cauliflower mash dish, you won’t be disappointed.

Ingredients

  • 1 medium-size head cauliflower, cut into florets
  • ¼ cup sour cream
  • 2 tbsp. chopped fresh chives
  • Sea salt and freshly ground GF black pepper
  • 1 Tbsp. melted butter (optional)
  • Instructions

  • Steam cauliflower for 12 - 15 minutes until tender
  • Transfer cauliflower one at a time to a food processor and blend until creamy. Do this in 2 batches
  • Mix in sour cream and chives and season with salt and pepper
  • To serve drizzle with melted butter
