Classic Vegetarian Lentil Soup

This is a super flavourful yet light and vegetarian soup. Lentils are very high in folate and fiber so you can have healthy without giving up the delicious taste.

Serves 4


  • 1 cup dried lentils (soak in 3 cups of water for 2 hours or overnight)
  • 2 tbsp. extra virgin olive oil
  • 1 organic leek cut in half cleaned and sliced thinly, using only the white part
  • 2 organic garlic cloves, chopped
  • 1 GF turmeric powder
  • 4 cups GF organic vegetable broth
  • ½ turnip, peeled and chopped into small pieces • 2 carrots, peeled and chopped into small pieces • 2 celery stalks, chopped into small pieces • ½ yellow or red pepper sliced thinly
  • 2 tbsp. organic GF apple cider vinegar
  • 1 tsp. pure maple syrup
  • ½ cup organic chopped parsley
  • Sea salt and organic GF freshly ground black pepper to taste
  • Instructions

  • Discard water from lentils and rinse
  • Add olive oil and leeks into a large pot and sauté for 5 minutes
  • Add garlic and turmeric stir until just fragrant
  • Add broth, lentils, turnip, carrots, celery and pepper, cook on low heat for 1 hour
  • Add vinegar, parsley and salt and pepper to taste
