Classic Vegetarian Lentil Soup

This classic vegetarian lentil soup is packed with flavour and interesting textures. Lentils are rich in folate and fiber so you can have healthy without giving up the delicious taste. Serve with a slice of gluten free herb and garlic bread

 

Ingredients

  • 1 cup whole dried lentils (soaked in water for 2 hours or overnight)
  • 2 tbsp. extra virgin olive oil
  • 1 leek diced, using only the white part
  • 2 garlic cloves, chopped
  • 1 tsp. GF turmeric powder
  • 4 cups GF vegetable broth
  • ½ turnip, peeled and cut into small cubes • 2 carrots, diced • 2 celery stalks, diced • ½ yellow bell pepper sliced
  • 2 tbsp. GF apple cider vinegar
  • 1 tsp. pure maple syrup
  • ½ cup chopped parsley
  • Sea salt and GF freshly ground black pepper to taste
  • Instructions

  • Discard water from lentils and rinse
  • Add olive oil and leeks into a large pot and while stirring cook over medium heat for 5 minutes
  • Add garlic and turmeric stir until just fragrant
  • Add broth, lentils, turnip, carrots, celery, bell pepper and season with salt and pepper. Cover and cook over low heat for 1 hour or until lentils are tender
  • Remove from the heat. Add vinegar and parsley. Serve hot
