The fresh parsley and apple cider vinegar tie everything together and add freshness and a zesty flavour. I can’t tell you just how delicious this lentil butternut squash soup is.  

You can also make this naturally gluten-free soup in advance. The soup’s flavour is even better the next day or the day after. And this soup will keep up to five days in the refrigerator.
