Avocado Egg Salad Burger Recipe

This is a bit more substantial and healthier than the usual egg salad sandwich. The avocado adds a creamy richness that melds right into the eggs. You want the avocados to be ripe without brown spots. This is a complete meal and comes together quickly. Avocado egg salad burger accommodates gluten free, paleo, keto and vegetarian diets


3 avocados, peeled and pitted
2 free-range eggs, hard-boiled and peeled
2 Tbsp. chopped chives or thinly sliced green onions
1 Tbsp. chopped fresh parsley
1 Tbsp. fresh lemon juice
1 tsp. GF Dijon mustard
¼ tsp. GF cayenne pepper
Sea salt to taste
Toppings: tomatoes, spinach, cabbage, onions sesame seeds


In a medium size bowl mash one avocado and eggs until small chunks form
Add chives, parsley, lemon juice, mustard, cayenne pepper and season with salt to taste. Mix until ingredients are combined
To make burgers, cut about ¼ inch off the bottom half of two avocados. Layer with avocado egg salad, cabbage, onion, tomatoes and spinach. Add some more avocado egg salad and top with the other half of avocados. Sprinkle with sesame seeds
