Rice With Parsley, Mushrooms And Carrots

Fresh parsley, mushrooms and carrots give this easy gluten-free rice dish tasty flavour and nice texture. Serve this flavourful rice dish with fish or chicken

Ingredients

  • ¼ cup butter
  • 1 cup thinly sliced mushrooms
  • 1 cup fresh chopped parsley
  • 1 medium size carrot, roughly grated
  • 1 tsp. GF ground turmeric
  • 2 cups GF basmati rice
  • 3 cups gluten free chicken or vegetable stock
  • 1 GF dried bay leaf
  • ½ tsp. sea salt
  • Instructions

  • Heat butter over medium heat in a large saucepan. Add mushrooms and cook for three minutes
  • Add parsley, carrot, turmeric and basmati rice and cook for one minute while stirring.
  • Add balance of ingredients, cover and cook over low heat for 20 minutes
  • Remove bay leaf and fluff up the rice with a fork. Enjoy!
