One Pot Rustic Chicken Family Style

A wonderful way to finish a busy day is with a family style roasted chicken. This tender chicken surrounded by loads of veggies immersed in herbs and spices takes just minutes to prepare. Easy clean up too because we are using only one roasting pan. I call it my go-to dinner when I had a busy long day but still want to make a healthy meal for my family.

 

Ingredients

  • 4 – 5 lb. organic or free range roasting chicken
  • 3 medium sweet potatoes, peel and cut to large pieces
  • 2 yellow onions, peel and cut into large pieces
  • 4 carrots, cut into large pieces
  • 10 garlic cloves
  • 1 large fennel bulb, remove both ends and cut into large pieces
  • 3 corns, cleaned and halved
  • 1 Tbsp. sea salt
  • 1 tsp. GF ground paprika
  • ½ tsp. GF ground black pepper
  • 1 Tbsp. fresh rosemary or 1 tsp. dried rosemary

    Instructions

  • Preheat oven to 375 F
  • Season chicken with salt and place in a large roasting pan, cover and bake for one hour
  • Combine remaining ingredients in a large bowl and pour over the chicken, arranging the vegetables evenly on the sides. Bake for 1 more hour uncovered stirring vegetables halfway
  • To serve place chicken and vegetables on a large serving platter and pour the juices over top
