Gluten-Free Orange Loaf With Streusel Topping

Ingredients
3 large eggs
1/2 cup extra virgin olive oil
½ cup pure maple syrup
1 cup fresh orange juice + zest of 1 large orange
1 Tbsp. fresh lemon juice
1 tsp. Pure vanilla extract
1 1/2 cups GF all-purpose flour blend that includes xanthan gum (cup4cup or better batter are best for this recipe)
1/4 cup arrowroot starch/flour
2 tsp. GF aluminum-free baking powder
1 tsp. GF baking soda
½ tsp. GF ground turmeric, optional (adds a golden colour naturally to the loaf)
1/2 tsp. sea salt
STREUSELÂ
1/2 cup certified GF toasted oat flour or GF all-purpose flour blend (the oat flour gives it a tasty nutty flavour)
1/4 cup coconut sugar or brown sugar
2 Tbsp. butter, cold
Instructions
- Preheat oven to 350 F and line a 9 x 5-inch loaf pan with parchment paper
- Whisk the eggs with an electric mixer until frothy. Add olive oil maple syrup, orange juice, orange zest, lemon juice and vanilla. Whisk until mixed well
- In a separate bowl combine flour, arrowroot starch, baking powder, baking soda, turmeric and salt
- Pour wet mixture into dry ingredients and whisk until the batter is smooth. Pour batter into prepared pan
- For the streusel topping; Using your hands combine the flour, coconut/brown sugar and butter to form small crumbs. Sprinkle on top of the loaf, pressing it in gently. Bake for 65 minutes
- Cool loaf in the pan
