Gluten-Free Olive Oil Orange Cake

Sink your fork into this rustic coffee cake, flavoured with fresh oranges. This tasty gluten-free cake is dairy free and sweetened with fresh orange juice and pure maple syrup. Kids especially love this sweet treat because it has oranges throughout making the cake deliciously moist

Ingredients

  • 1 cup almond meal
  • 1 cup all purpose gluten free flour blend
  • ¾ cup rice flour
  • 1 tsp. GF baking soda
  • ½ tsp. GF ground cinnamon
  • ¼ tsp. sea salt
  • 1 cup fresh orange juice
  • ½ cup pure maple syrup
  • 1/3 cup extra virgin olive oil
  • 2 large eggs
  • 1 Tbsp. orange zest
  • 2 tsp. pure vanilla extract
  • 2 oranges, peel and chope. Keep one ¼ inch thick circle for the top of the cake
  • Instructions

  • Heat oven to 350 F and line the bottom of an 8-inch springform pan with parchment paper
  • In a large bowl mix first 6 ingredients
  • In a separate bowl whisk together orange juice, maple syrup, olive oil, eggs, orange zest and vanilla. Add into dry ingredients and stir until creamy.
  • Add orange pieces and stir. Pour batter into the prepared pan and place an orange slice in the middle of the cake. Lightly press into the batter
  • Bake for 45 minutes or until the cake is golden and firm to touch
  • Cool completely before removing the pan
