Gluten-Free Chickpea Date Fudge Brownies
These gluten-free chickpea date fudge brownies are deliciously rich and indulgent, yet they are simple to prepare using healthy ingredients. These date fudge brownies are made with chickpea flour and not chickpeas. I added coffee and cardamom for that exotic flavour, making this gluten-free dessert even more delicious than your typical brownies.

To start, briefly soak dates in vanilla and coffee. While the dates are soaking, combine dry ingredients. To keep this brownie recipe vegan, I replaced eggs with a flax egg.
After soaking the dates, they soften and are deliciously flavoured with vanilla and coffee. Add the dates to a food processor and process to create a thick paste. The mixture is mixed with the dry ingredients and with the flax egg. The batter will be thick but is easily spreadable into the baking dish.
The brownies are ready to be baked, cooled and enjoyed!
