Gluten-Free Chickpea Date Fudge Brownies

Chickpea date fudge brownies are delightfully rich and indulgent, yet it is simplicity itself to prepare. I have added coffee and cardamom to this recipe,  making this dessert more flavourful than your typical brownie. When following a restricted diet, it is nice to find a dessert recipe that is vegan, gluten-free and sugar-free

Ingredients

  • 1 cup (125 g) pitted medjool dates
  • 2 tsp. Pure vanilla extract
  • 3/4 cup hot coffee
  • 2 Tbsp. melted coconut oil
  • 1/2 cup + 1 Tbsp. chickpea flour (garbanzo)
  • 1/4 tsp. GF ground cardamom or cinnamon
  • 1 tsp. GF aluminum free baking powder
  • 1/4 tsp. Pure sea salt
  • 1 flax egg (1 Tbsp. Ground flaxseed soaked in 3 Tbsp. cold water for 15 min)
  • Instructions

  • Preheat oven to 350 F and line an 8x8-inch baking pan with parchment paper
  • Soak dates in vanilla and coffee for 10 minutes
  • In a small bowl whisk together chickpea flour, cocoa powder, baking powder and salt
  • Place dates with coffee and coconut oil into a food processor. Process until smooth
  • Add date mixture to dry ingredients and stir until just combined. The batter will be thick
  • Pour batter into prepared baking pan and sprinkle with chocolate chips. Bake for 25 - 30 minutes until brownies are set. Cool before slicing
