Braised Peppers with Balsamic Reduction

This peppers with balsamic reduction recipe is simple to make, aromatic, full of flavour, and takes only minutes to cook. The finish of balsamic reduction completes the peppers to perfection. You can serve the peppers hot, warm or cold. The peppers are most delicious in warm winter salads

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 4 medium bell peppers, yellow and orange, sliced
  • 1 large yellow onion, sliced
  • 1 garlic clove, crushed
  • 2 Tbsp. GF balsamic reduction vinegar
  • Sea salt and freshly ground GF black pepper to taste
  • Garnish: fresh chopped parsley
  • Instructions

  • Heat the oil over medium heat in a large non-stick pan. Add onions and while stirring cook for 2 minutes
  • Add garlic and peppers and stir-fry for five minutes or until peppers are crispy tender
  • Place on a serving platter and drizzle with balsamic reduction vinegar
  • Season with salt and pepper to taste and garnish with fresh parsley
  • Serve hot, warm or cold
