Best Gluten-Free Tuna Melt Sandwich

Tuna melts are popular because they make a hearty lunch. Packed with protein, omega 3 fatty acids, B vitamins and fiber makes this sandwich nutritious as well. This delicious cheesy tuna melt is made without mayonnaise making it a lighter option.

Ingredients

  • 1 can of good quality tuna, drained
  • 2 celery stalks, finely diced
  • 1 small red onion, finely chopped
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. extra virgin olive oil
  • Pinch of sea salt and GF freshly ground black pepper
  • Handful of pea shoots
  • 4 slices gluten-free bread, toasted
  • 4 slices cheddar cheese
  • Instructions

  • In a medium bowl, mix tuna, celery, onion, lemon juice, olive oil, salt and pepper
  • Generously top each bread with pea shoots, then tuna mix and top with cheese slices
  • Place on a baking sheet and broil until cheese is bubbling, about 1 - 2 minutes
  • Serve immediately
