Gluten-Free Braised Short Ribs

Gluten-Free Braised Short Ribs Recipe
Ingredients:
Coconut oil (1 tablespoon)
Beef short ribs (4 pounds; grass-fed variety)
Carrots (2 pieces; chopped)
Celery (1 stalk; sliced)
Onion (1 bulb; chopped)
Garlic (3 cloves; minced)
Gluten-free coconut flour (2 tablespoons)
Organic tomato paste (1 1/2 tablespoons)
Red wine (1 cup)
Thyme (1 teaspoon)
Rosemary (1/2 teaspoon)
Salt (1 1/2 teaspoon)
GF ground black pepper (1 teaspoon)
Beef stock, gluten free (1 1/2 cup)
Instructions:
Rinse the short ribs under cold water. Dry them with a paper towel afterwards. Season with salt and pepper. Set aside
Pour the coconut oil in a skillet on a medium heat setting. Let the oil be heated before your braise the short ribs. Each side should be braised for five minutes. Make sure that you do the braising gradually, as you do not want to congest the skillet.
After the braising, take out the short ribs and place them in your slow cooker.
Add all the vegetables to the skillet. Stir and cook for 10 minutes. Add the tomato paste and flour to mix. Stir the vegetable mixture for another 2 minutes.
Add red wine and bring to boil. Reduce heat to medium-low
Add salt, thyme, and rosemary and stir to combine. Add the beef stock and stir. Cook for 2 more minutes.
Remove the skillet from the stove and pour the mixture into your slow cooker, with the braised short ribs. Crank the slow cooker on and let the slow cooking begin. Cook for 6 – 8 hours
