Rice With Parsley, Mushrooms And Carrots

Fresh parsley, mushrooms and carrots give this easy gluten free rice dish lot of flavour and texture.


  • ¼ cup organic butter
  • 1 cup thinly sliced mushrooms
  • 1 cup freshly chopped organic parsley
  • 1 organic, medium size carrot, roughly grated
  • 1 tsp. organic, gluten free ground turmeric
  • 2 cups organic, gluten free basmati rice
  • 3 cups organic, gluten free chicken or vegetable stock
  • 1 organic, gluten free dried bay leaf
  • ½ tsp. sea salt
  • Instructions

  • Heat butter in a large saucepan and then add mushrooms, cook for three minutes on medium heat.
  • Stir in parsley, carrot, turmeric and basmati rice and cook for one minute while stirring.
  • Add the balance of ingredients, cover and cook on low heat for 20 minutes.
  • Remove bay leaf and fluff the rice with a fork. Enjoy!
