Rice With Parsley, Mushrooms And Carrots

Fresh parsley, mushrooms and carrots give this easy gluten free rice dish lot of flavour and texture.


¼ cup organic butter
1 cup thinly sliced mushrooms
1 cup freshly chopped organic parsley
1 organic, medium size carrot, roughly grated
1 tsp. organic, gluten free ground turmeric
2 cups organic, gluten free basmati rice
3 cups organic, gluten free chicken or vegetable stock
1 organic, gluten free dried bay leaf
½ tsp. sea salt


Heat butter in a large saucepan and then add mushrooms, cook for three minutes on medium heat.
Stir in parsley, carrot, turmeric and basmati rice and cook for one minute while stirring.
Add the balance of ingredients, cover and cook on low heat for 20 minutes.
Remove bay leaf and fluff the rice with a fork. Enjoy!
