One Pot Rustic Chicken Family Style

A perfect way to finish a busy day. This tender chicken surrounded by loads of veggies immersed in herbs and spices takes just minutes to prepare. Easy clean up too because we are using only one roasting pan. I call it my go to dinner when I am tired but still want to make a healthy meal for my family.

Serves  6

Ingredients

4 – 5 lb. organic or free range roasting chicken
3 medium sweet potatoes, peel and cut to large pieces
2 yellow onions, peel and cut to large pieces
4 organic carrots, cut to large pieces
10 garlic cloves
1 large fennel, cut ends off and cut to large pieces
3 corns, cleaned and cut in half
1 tbsp. sea salt
1 tsp. organic GF ground paprika
½ tsp. organic GF ground black pepper
1 tbsp. fresh organic rosemary
¼ cup extra virgin olive oil

Instructions

Preheat oven to 375 F
Season chicken with salt and place in a large roasting pan, cover and bake for one hour
Combine balance of ingredients in a large bowl and pour over the chicken arranging the vegetables evenly at the sides. Bake for another hour uncovered stirring vegetables once half way through
To serve place chicken and vegetables on a large serving platter and pour the juices on top
