Easy Vietnamese Pho Soup

This is an easy and quick version of Vietnamese pho soup. This soup is my go to comfort food, I love it in the cold winter days and I love it in the hot summer days. It is is healthy, super flavourful, light and hearty at the same time. Because everyone adds their desired garnishes, it is a great way to have a meal with your family, just make sure you have plenty of bean sprouts since this is everyone’s favourite garnish. This soup is on my YUM list!


8 cups GF beef broth + 2 cups of water
4 garlic cloves, minced
1 organic medium sweet onion, quartered
2 organic GF cloves
1 (4 inch) ginger, diced
2 whole star anise
1 cinnamon stick
1 tbsp. fish sauce
Sea salt to taste
1 package pho rice noodles, cook as per package instructions and set aside (flat rice noodles)
10 oz. steak, very thinly sliced, flank steak is my preference
1 cup thinly sliced mushrooms
Garnishes, bean sprouts, organic thinly diced green onion, thinly sliced jalapenos, lime wedges, bamboo shoot, fresh organic cilantro chopped, Thai basil leaves and I also add blanched baby bok choy.


Add beef broth, water, garlic, onion, cloves, ginger, whole star anise, cinnamon stick and fish sauce into a pot, cover and simmer for 30 minutes. Remove onion, cloves, ginger, cinnamon stick and star anise
When you are ready to serve the soup, fill the bowls about halfway full with noodles Add the beef and mushrooms
Then add the super hot broth and top with your garnishes
