Easy Vietnamese Pho Soup

This is a simple version of Vietnamese pho soup.  This gluten free Pho Soup is healthy, flavourful, light and hearty all at the same time


  • 8 cups GF beef stock
  • 4 garlic cloves, minced
  • 1 medium sweet onion, quartered
  • 2 GF cloves
  • 1 (4 inch) ginger, peeled and diced
  • 2 whole star anise
  • 1 GF cinnamon stick
  • 1 Tbsp. fish sauce
  • Sea salt to taste
  • 1 package pho rice noodles, cook per package directions (flat rice noodles), set aside
  • 10 oz. steak, thinly sliced, (flank steak is my preference)
  • 1 cup sliced mushrooms
  • Garnish: bean sprouts, thinly sliced green onion, thinly sliced jalapenos, lime wedges, bamboo shoots, chopped cillantro, Thai basil leaves, blanched baby bok choy.
  • Instructions

  • Add beef broth, water, garlic, onion, cloves, ginger, whole star anise, cinnamon stick and fish sauce into a pot, cover and simmer for 30 minutes. Remove onion, cloves, ginger, cinnamon stick and star anise
  • When you are ready to serve the soup, fill the bowls about halfway full with hot noodles Add sliced beef and mushrooms and top with hot soup
  • Top with your favourite garnish
