Matcha Avocado Chia Pudding
Matcha Avocado Chia Pudding – a healthy beautifully green pudding in a cup. I can’t think of a better way to start your day than with a pudding made with chia and avocado.
The chia pudding is made with nutrient-rich foods such as matcha and fresh avocado. For extra creaminess, I added dairy-free milk. I used almond milk for extra protein, but some other choices are coconut milk, hemp milk, or rice milk. I also added aromatic vanilla and for the sweetener, maple syrup, but feel free to use honey or agave. And the fresh lemon juice balances all the flavours beautifully.

The nutrient-packed matcha, avocado and chia have everything our bodies need. Healthy fats, antioxidants, fiber, protein, vitamins and minerals. A good balance of healthiness.
Enjoy this healthy pudding for breakfast or as anytime snack. I love to layer mine with coconut yogurt and some blueberries. For a special occasion such as St. Patrick’s Day, add a layer of chocolate sauce and coconut cream, my favourite shamrock dessert!
