Matcha Avocado Chia Pudding

Just in time for St. Patrick’s Day! This matcha avocado chia pudding is packed with healthy fats, antioxidants, fiber, protein, vitamins, and minerals. Enjoy this healthy pudding for breakfast or as a snack later in the day. I love to layer mine with coconut yogurt and some blueberries. Add chocolate sauce over top and serve this creamy pudding as dessert for St. Patrick’s Day, my favourite shamrock dessert

Ingredients

  • 1 ripe avocado
  • 1 1/2 cup non-dairy milk such as coconut, hemp or almond
  • 2 Tbsp. Fresh lemon juice
  • 4 Tbsp. Chia seeds
  • 2 tsp. Matcha powder
  • 1 tsp. Pure vanilla extract
  • Sweeteners to taste, such as coconut sugar, pure maple syrup or honey
  • Instructions

  • Using a high speed blender, blend avocado, milk, lemon juice, matcha, and vanilla until smooth
  • Pour mixture over chia seeds and add sweetener
  • Stir to combine, cover and refrigerate
  • After 15 minutes stir one more time and refrigerate for 4 hours or overnight. Enjoy
