Coconut Chocolate and Fruit Macaroons

If you are craving a sweet snack try coconut chocolate and fruit macaroons. This easy to make sweet treat is satisfying and on a healthier side. Kids especially love the macaroons

Ingredients

  • 2 cups unsweetened shredded coconut
  • 2/3 cup sulfite free, mixed dried fruit, (cherries, raisins, blueberries)
  • 1/3 cup agave nectar
  • 2/3 cup mini semi-sweet dark chocolate chips
  • 3 large egg whites
  • ¼ tsp. sea salt

    Instructions

  • Preheat oven to 350 F and line a baking sheet with parchment paper
  • In a medium bowl, using a spatula combine everything except egg whites and salt
  • In a large bowl beat the egg whites with the salt until stiff peaks form
  • Gently fold the dry ingredients into the egg whites until combined
  • Using a tablespoon, drop batter onto prepared baking sheet
  • Bake for 12 – 15 minutes or until golden
  • Cool for 5 minutes on a baking sheet, then transfer to a wire rack until cooled completely
