Indulge in this heavenly gluten-free chocolate dessert. This creamy chocolate chia pudding is rich in fiber, protein and antioxidants. Serve as a dessert, snack or add some fresh fruit and enjoy it for breakfast

Ingredients

  • 1 ¾ cups coconut milk (use lite coconut milk if you are using canned coconut milk)
  • ¼ cup pure unsweetened cocoa powder
  • ¼ cup pure maple syrup or agave nectar
  • 1 tsp. pure vanilla extract
  • ½ tsp. GF ground cinnamon
  • 1/3 cup GF black chia seeds
  • FOR THE TOPPING
  • Grated gluten-free chocolate (optional)
  • Handful of fresh berries

    Instructions

  • Whisk together coconut milk, cocoa powder, maple syrup/agave, vanilla and cinnamon.
  • Add chia seeds and stir to combine
  • Pour into 4 serving bowls and seal with a plastic wrap (I used margarita glasses). Refrigerate overnight
  • Of you wish, top with chocolate and berries before serving
