Paleo Chocolate Pistachio Balls

Here is another healthy gluten free dessert for your recipe box. The richness of cocoa combined with the buttery taste of pistachios is what makes these amazing paleo nuggets. These addictive sweets are high in protein, so all you need is one, that is if you can stop there

Ingredients

1/3 cup + 1 Tbsp. full fat, canned coconut milk
¼ cup unsalted butter or coconut oil
8 oz. dark chocolate (80% cacao), chopped
1 Tbsp. grated lemon zest
2 tsp. gluten free vanilla extract
1 ¾ cups coconut sugar
1 ½ cups blanched almond flour (not almond meal)
1 cup gluten free organic cocoa powder
1 cup raw pistachios

Instructions

In a large saucepan over medium heat, warm the coconut milk and butter/coconut oil
Add the chocolate and stir until the chocolate is melted, about 3 minutes
Stir in lemon zest and vanilla, and then coconut sugar, almond flour, and cocoa. Stir the mixture for about 3 minutes and then remove from the heat. Let the mixture cool for 30 minutes
Place the pistachios in a food processor and pulse until they are ground to a coarse powder
Using your hands roll the chocolate mixture into 1 ½ inch balls (about the size of a walnut) and then roll them in the chopped pistachios
Place the balls on a tray and refrigerate for 2 hours before serving
