Gluten Free Pasta Salad with Sun Dried Tomatoes and Parsley

This gluten free pasta salad makes a perfect side at barbecues or serve as a simple vegetarian dinner. The pasta is flavoured with a light garlic vinaigrette, fresh parsley, sun dried tomatoes and coated with Parmesan cheese. In this recipe, it is the selection of ingredients that makes this an outstanding light pasta salad.  Serve as a main or side



1 package (227g or ½ lb.) uncooked gluten free pasta of your choice. I used GF rice rotini. Other choices are quinoa/rice or rice/corn pasta. Cook as per package instructions
1 cup sun dried tomatoes packed in olive oil. Drain and roughly chop, but keep the oil
1 red or orange bell pepper, thinly sliced
1 bunch fresh parsley, chopped
1/4 cup extra virgin olive oil
1/4 cup GF apple cider vinegar
4 garlic cloves, minced
Sea salt and freshly ground GF black pepper to taste
1 cup freshly grated Parmesan cheese


In a large bowl combine cooked pasta, sundried tomatoes with oil, red bell pepper and parsley
In a separate bowl whisk together all the dressing ingredients. Pour the dressing over pasta and season with salt and pepper. Mix well. Add Parmesan cheese and stir until all the pasta is well coated.
Refrigerate in airtight container overnight. To serve bring to room temperature and stir well. Top with extra Parmesan cheese if desired
