Coconut Chocolate and Fruit Macaroons

This is a wonderful combination of coconut, chocolate and fruit, and makes an excellent anytime gluten-free sweet snack.


  • 2 cups unsweetened shredded organic coconut
  • 2/3 cup sulfite free, organic mixed dried fruit, (cherries, raisins blueberries) I have also added few organic sprouted pumpkin seeds (optional)
  • 1/3 cup pure maple syrup
  • 2/3 cup mini dark chocolate chips
  • 3 large organic egg whites
  • ¼ tsp. sea salt
  • Instructions

  • Preheat oven to 350 F and line a baking sheet with parchment paper
  • In a medium bowl, using a spatula combine all ingredients except egg whites and salt
  • In a large bowl beat the egg whites with the salt until stiff peaks form
  • Gently fold the dry ingredients into the egg whites until they are well combined
  • With a tablespoon, drop batter onto the lined baking sheet
  • Bake for 12 – 15 minutes or until golden brown.
  • Cool for 5 minutes on a baking sheet, then transfer to a wire rack until cooled completely.
  • These can be kept in a sealed container at room temperature or refrigerated.
