Coconut Chocolate and Fruit Macaroons

This is a wonderful combination of coconut, chocolate and fruit, and makes an excellent anytime gluten-free sweet snack.

Ingredients

2 cups unsweetened shredded organic coconut
2/3 cup sulfite free, organic mixed dried fruit, (cherries, raisins blueberries) I have also added few organic sprouted pumpkin seeds (optional)
1/3 cup pure maple syrup
2/3 cup mini dark chocolate chips
3 large organic egg whites
¼ tsp. sea salt

Instructions

Preheat oven to 350 F and line a baking sheet with parchment paper
In a medium bowl, using a spatula combine all ingredients except egg whites and salt
In a large bowl beat the egg whites with the salt until stiff peaks form
Gently fold the dry ingredients into the egg whites until they are well combined
With a tablespoon, drop batter onto the lined baking sheet
Bake for 12 – 15 minutes or until golden brown.
Cool for 5 minutes on a baking sheet, then transfer to a wire rack until cooled completely.
These can be kept in a sealed container at room temperature or refrigerated.
