Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 small yellow onion, chopped
  • 3 garlic cloves, chopped
  • 1 tsp. GF caraway seeds
  • ½ tsp. GF ground turmeric
  • 1 bunch organic kale, stems removed and thinly sliced
  • 2 cups cubed butternut squash
  • 1 large Portobello mushroom, sliced
  • 4 cups GF organic vegetable stock
  • Sea salt and GF ground black pepper to taste
  • Instructions

  • In a large soup pot, heat olive oil over medium heat. Add onions and cook for 5 minutes
  • Add garlic, caraway, and turmeric and stir to combine
  • Add kale and cook while stirring for 3 minutes
  • Add squash, mushrooms, stock and season with salt and pepper. Bring to boil, cover and reduce heat to low. Cook for 15 minutes. Enjoy!
