Gluten-Free Paleo Breakfast Bar

You will love this gluten-free paleo breakfast bar, it is delicious, quick and easy to prepare and packed with healthy nutrients, fiber and protein.This healthy bar is made with walnuts, pumpkin seeds, coconut and dates and is tasty to the last crumb. But don’t stop at breakfast, this bar is wonderful as an anytime snack. Did I mention this bar is also vegan? Enjoy!

Ingredients

  • 1 cup almond flour
  • ½ cup coconut flour
  • ½ tsp. GF baking soda
  • ¼ tsp. pure sea salt
  • ½ cup unsweetened finely shredded coconut
  • ½ cup roughly chopped walnuts
  • ½ cup pumpkin seeds
  • ½ cup roughly chopped dates
  • 1/3 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 1 tsp. pure vanilla extract
  • Instructions

  • Preheat oven to 350 F and line an 8 x 8-inch baking dish with parchment paper
  • In a medium-size bowl combine almond flour, coconut flour, baking soda and salt
  • Add coconut, walnuts, pumpkin seeds and dates and stir to combine
  • In a small bowl mix coconut oil, maple syrup/honey, and vanilla. Add to dry ingredients and mix together
  • Using a spatula, press the dough evenly into the prepared baking dish and bake for 18 – 20 minutes, until golden
  • Cool in the baking dish completely before cutting
